Butter Baked Goods Classic White Cake with Coffee Buttercream Frosting and a Giveaway! {Giveaway Closed}


I used to hate making cake. 

I know. Blasphemy, right? A self-proclaimed baker that hates making cake? An oxymoron at its finest, ladies and gentleman.

But I did. I honestly hated making cakes with a passion. I was besties with cupcakes and lovers with loaves, but having to bake and decorate a full on cake made gave me anxiety for days. The problem lies in the personality. You see, I'm a bit of a perfectionist. It's torture if the frosting doesn't smooth over right or the layers of buttercream don't have that uniform look once cut into. I just want to scrap it like a piece of paper and start over. 

Then I gained 705 pounds from eating my mistakes, so one gets over it pretty quickly. 

Fast forward to almost two years later. I now have a torrid love affair with cakes, but a dripping disdain for cupcakes. I really despise making cupcakes. Oh, I know. I'm hopeless. If friends or family ask for cupcakes, I try to divert their attention to something shiny while I hypnotized them into choosing a cake. Or I'll flick their ear really hard.

I'm just kidding.

Or am I?

Last Christmas, I received the Butter Baked Goods cookbook from "Santa". It was one of those cookbooks I'd flip through every time I walked into a bookstore with him, sighing heavily, and finish off by running a seductive finger ever so gently across the spine as I winked. If he wasn't reading my cues (or perhaps he was, he was just enjoying me making a complete ass of myself in front of others), I'd resort to the constant clearing of my throat quite loudly as I'd rock the cookbook back and forth in his face until he got the hint.

Aaaaaand he did.

Once I had a copy of Butter in my hand and in my kitchen, I made several things straight out of the gate post, one of which was this cake. After having practiced making cakes from other cookbooks and not doing too too badly, I like to think this cake solidified the relationship, especially with its ease and versatility. For an event this past summer, I added peach purée into the cake batter as well as the buttercream. Our table leader told me it as like eating wedding cake. Holy compliment. Wedding cake is something I hold in very high regard, but I'll save that story for another time. 

Cake and I finally came to an agreement - and it's been a lovely relationship since.


Next chapter.

This past summer, I was fortunate enough to visit Butter during a trip to Vancouver with my family. The bakery itself is so gorgeous and ties in beautifully with the cookbook. It's uber feminine with rose adorned wallpaper and splashes of sea foam green and pink paint throughout. It's seriously the prettiest bakery I've ever been to. 


My favourite experience while I was there (beside moaning through most of their goodies), was absolutely the staff. I ordered eight things from the counter as well as several more to go and the staff didn't even bat an eyelash. (I later found out it was Rosie's daughter, India, who went back and told her mom someone bought lots of treats and thought it was the coolest thing ever!) I've been to establishments where eyes go wide when I order anything over four items, but here, it was like, 'Can I get you anything else? This is really good too....' And I fell in love. They clearly understand the heart of a foodie and for that alone, I'm so grateful.

I finally met Rosie last month in the flesh at her bakery while I was back out in Vancouver attending a conference and popped in for Robyn's birthday. Rosie is one of the sweetest, most genuine people I've ever met. She's also fun and very welcoming. It took me all of about fifteen seconds to realize that I so want to be her when I grow up.

Butter is now my happy place. 


Of course, with anything I admire or adore, I want the world to know about it. Good people and good things demand to be celebrated.

  17. Cake and I have a real love/hate thing going on... in that I love to eat it, but I absolutely hate to make it. The darn things just always end up all lopsided and unevenly frosted, like an edible leaning tower of pisa. :P I might just have to reconsider long enough to try this cake, though, because it sounds positively dreamy (and really, even a lopsided and unevenly frosted cake still tastes plenty good, right?)

  23. Sharing is caring, thus you should share your loaf lovers with me. Because I too, love a good loaf. I also love Butter. The ingredient and the cafe. And while my love of cake is undisputed, my love of baking can be touchy. And not in a good way. That being said, when I made scones for the giveaway, I was blown away by how awesome the recipe and directions were. This is seriously a stellar book. And so is your cake. Stellar I mean, not a book. Man, I need coffee.
