Burnbrae Farms Eggs2go!

"I like horrible eggs."

This is what my son has called hard boiled eggs since he could talk. Despite the fact he's now a well articulated seven-year-old, let me reassure you that he considers eggs anything but horrible. True to his mother's nature, they are one of his favourite foods.

When he started school, he often requested peanut butter sandwiches in his bento box, but unfortunately, I would emphatically veto that request due to nuts being forbidden in school. Egg salad sandwiches quickly graced the hero nook. In fact, they became a daily request for weeks on end. I often thought his request was sincere until I volunteered in his classroom and discovered the almost sinister laugh he harboured when he opened his lunch. The class erupted into a series of high-pitched, disregarding noises. I realized in that moment smelling down the classroom with that undeniable aroma played a small role in his love for them. He tucked into his sandwich without haste and chuckled to the last bite. Nevertheless, I was all too happy to pack egg salad in his lunch and know without a shadow of a doubt it will be eaten.

Like many children, after a while, their tastes change. I could no longer pack lunches the night before because what sounds good in the evening isn't always the case in the following morning. Truth be told, the same goes for the adults. It leads to more chaos and we find ourselves scrambling to find an alternative. Thankfully, egg salad sandwiches were simply replaced with straight up hard boiled eggs.

A couple of years ago, I discovered Burnbrae Farms Omega 3 Eggs2Go prepared eggs while on my weekly grocery run - two medium-sized eggs that are pre-boiled and peeled, ready to go wherever you do. I picked up the snack pack, gave it a once over, put it back onto the shelf and didn't put too much thought into it. Fast forward several weeks later. I was having lunch with a few co-workers and one of them pulled these said eggs out of her bag. She is a Lacto-ovo-vegetarian and is all about healthy convenience. Eggs are one of her favourite proteins, but would often complain the carton she purchased were too fresh to boil as most of the egg white would chunk off with the shell upon peeling. After a trial run, I was impressed with the ease and convenience these snack packs really do offer. You can eat them straight out of the pack or create simple meals like egg salad with them.
